I am the Kitchen Magician, through and through. I specialize in Cajun, Creole, Country Soul, Gourmet Fusion, Healthy meals, as well as an amazing 8 course nose-to-tail culinary experience. I began in Pastry at a very young age, and evolved into Savory cuisine in 1980. Although classically trained by European Master Chefs, I often rely on the teachings of my Mother, who was a great Chef of her community; and I have thusly integrated a vast array of techniques and styles into exciting and incredible flavors. My menu is extensive consisting of simple & fast dishes to almost everything else: from Seafood Jambalaya, Turduchen, incredible pastas, Cochon de lait, mouth-watering seafood, hearty oxtail or lamb stews, Daube de Queue de Boeuf, to Gourmet Burgers, Beef Wellington, and Baked Alaska.
